2007 Chardonnay Sleepy Hollow Vineyard

Winemaker Notes

Alive with fresh aromas of tropical fruit, pear, pineapple and citrus, with a bright yellow-gold color. Lively on the palate with a fruit-driven medley of coconut, pear, melon, lemon and honey flavors, supported by well-integrated oak and touches of toast, butter and vanilla. Solid acidity reinforces the balanced structure creating a fresh, lingering finish. A crisp, Chablis-style Chardonnay with good weight and acid backbone to compliment food well and to cellar.

Seawind 2007 Sleepy Hollow Vineyard Chardonnay was barrel-fermented in French oak and stainless steel to create a well-integrated subtle oak character with solid structure and a crisp finish. The fruit was gently whole-cluster pressed and the juice was settled overnight, then transferred to year-old Francois Freres and Daraguad & Jaegle oak and stainless steel barrels for cool fermentation. The oak-fermented wine completed malolactic fermentation, softening the character and adding richness. The stainless-fermented wine did not undergo secondary fermentation, retaining brisk acidity and fresh fruit character. The wine was barrel aged sur lie with occasional stirring for 9 months. The final blend included 33% stainless-fermented wine contributing a vibrant crispness to the finished cuvee.

Batonage: Oak and stainless; reduced frequency during 9 months in barrel
